If you love apricots and would like to make something delicious and oh-so-easy, then this shake is for you.
NOTE: The addition of vanilla may seem superfluous but it really enhances the flavour of the apricots.
- 1 ½ cups almond milk
- ½ cup dried semi-soft apricots, soaked
- 1 tsp vanilla extract
- A pinch of sea salt
- 1 tsp honey (optional)
- Soak the dried apricots in warm water to soften for 10 minutes.
- Strain to remove the soak water. In a blender, whizz all the ingredients until smooth.
- If you prefer a sweeter milk add a teaspoon of honey or more to taste.
