If you love apricots and would like to make something delicious and oh-so-easy, then this shake is for you.

NOTE: The addition of vanilla may seem superfluous but it really enhances the flavour of the apricots.

Apricot Milkshake

Yield: 2 servings
  • 1 ½ cups almond milk
  • ½ cup dried semi-soft apricots, soaked
  • 1 tsp vanilla extract
  • A pinch of sea salt
  • 1 tsp honey (optional)
  1. Soak the dried apricots in warm water to soften for 10 minutes.
  2. Strain to remove the soak water. In a blender, whizz all the ingredients until smooth.
  3. If you prefer a sweeter milk add a teaspoon of honey or more to taste.
