a quick and easy gluten free sweet treat

There are some days when you don’t have enough energy to lift a finger or you have so much to do that you don’t have much time but yearn for a chocolatey moreish snack.

These chocolate almond butter bites are a firm favorite in our house. Easy to knock up in minutes and you don’t have to be full of energy at the end of a long day in order to make them.

You might be fan of recipes like this where the biggest chore is going to be…who’s going to wash the food processor?

Makes 20 bites

¾ cup almond butter (or peanut or any seed butter is good),

½ cup cacao powder,

¼ teaspoon coarse sea salt

1 cup Medjool dates, pitted,

  1. In a food processor using the S blade, process together the almond butter, pitted dates and coarse sea salt until well combined into a paste.
  2. Then add the cacao powder and whizz until the mixture forms a stiff dough.
  3. Form into bite size chunks, roll and place on a baking sheet. Chill the bites for 10-20 minutes to firm up a little.

These will last for 2-3 months in an airtight container in the refrigerator.
