(Dairy free, gluten free, vegan)
It seems to me that there are two types of people in the world. Those who love celery and those who loathe it. Celery lovers, this is for you.
NOTES: Approx. 4 celery sticks will yield 1 cup of juice. If you are using shop bought almond milk, please ensure that it is unsweetened. You can use unsweetened hemp milk instead for a nut free soup.
- ½ ripe avocado, peeled and stone removed
- 1 cup celery juice
- 1 cup almond milk
- 1 tsp lemon juice
- ¼ tsp dried tarragon
- ½ tsp dried dill
- A good pinch of salt
- In a blender, whizz all of the ingredients until smooth and silky.
- Warm the soup into a saucepan until it is just warm to the touch.
- Serve in a warmed bowl.
