a dairy free refreshing treat
This easy piña colada iced lolly is delightfully refreshing. It’s the ideal summertime pick me up. The riper the pineapple, the more delicious your ice lolly will be. You can use homemade coconut cream or canned coconut milk for a thicker and creamier ice lolly.
- 2 cups fresh pineapple, cut into chunks
- 1 cup coconut cream
- 1 teaspoon lime juice
- 1 – 2 drops rum extract (optional)
- In a blender, whizz the pineapple with the coconut cream and lime together until smooth and creamy. Add the rum extract, if using.
- Pour the mixture into ice lolly moulds and freeze overnight.
