I am convinced that if you make this once, you will be finding reasons to use it on all manner of salads. The champagne vinegar provides a subtle sharpness whilst overall the dressing has both mellowness and depth. Try substituting white wine vinegar if you cannot find champagne vinegar.

This will keep refrigerated for 2- 3 days. I often have this is a jam jar in the fridge so I am never without a decent dressing since you never know when you might be in need of an urgent salad. Now that’s something I thought I would never say.

Sweet Mustard Dressing
  • 4 tbsp champagne vinegar
  • 2 tbsp wholegrain mustard
  • 2 tbsp agave or raw honey
  • a pinch of salt
  • a twist of black pepper
  • ¾ cup extra virgin olive oil
  1. In a blender, whizz all of the ingredients until smooth and creamy.
