quick and easy warming raw soup

INGREDIENTS

2 medium carrots
1 stalk celery
½ red pepper (bell pepper)
½ sun dried tomato, soaked in warm water
1 cup baby plum tomatoes
1 teaspoon lemon juice
½ teaspoon olive oil
Pinch of celery salt
Sea salt and pepper to taste

METHOD

1. Juice the carrots, stick of celery and the pepper (bell pepper).
2. Finely chop the soaked sun-dried tomato
3. In a blender, whizz the vegetable juice with the remaining ingredients.
4. Season to taste.
5. Heat the soup in a saucepan until just warm to the touch.
6. Serve in a warmed bowl.
